Chicken: Sicilian Spidini

Sicilian Spidini

Filling:
1 large onion, chopped
2 Tbsp. olive oil
1 (8 oz.) tomato sauce
1 Tbsp. parsley
1/3 cup Italian grated cheese
1/2 to 1 cup bread crumbs
1 lb. pork cutlets, sliced thin or veal cutlets, chicken cutlets or beef eye round, cut in 1/8 inch
slices


Preheat oven to 350 degrees F.

Pound meat slices thin with meat mallet. Saute onion in olive oil 5 minutes; add tomato sauce, parsley and saute 3 minutes. Remove from flame and add cheese and enough bread crumbs to make filling moist but firm.

Spread 1 to 2 tablespoons filling over each slice of meat. Roll jelly roll fashion and place 1 bay leaf over every end and secure ends and bay leaf with skewers. Place meat on skewers over a layer chopped onion and olive oil in 350 degrees oven for 1/2 hour, then turn and cook additional 1/2 hour. This dish may be cooked ahead of time and freezes well.
