Smothered Chicken

1/3 cup flour
1/2 tsp. paprika
1 tsp. salt
1/2 cup shortening
1 envelope chicken noodle soup mix
1/2 cup water
1 medium onion, sliced
1 cup evaporated milk
2 tsp. dried parsley flakes
1/2 tsp. poultry seasoning


Mix flour, paprika, and salt in a paper bag. Shake one cut up chicken in mixture, a few pieces at a time.

Brown the chicken in hot shortening over medium heat. Drain off drippings.

Stir into drippings, one envelope chicken noodle soup mix 1/2 cup water one medium onion, sliced. Cover and cook over low heat for 30 to 35 minutes or until a drumstick is tender when pierced with a fork. Place chicken in a deep serving dish.

Stir into skillet, evaporated milk, 2 tsp. dried parsley flakes, and poultry seasoning. Cook and stir until thickened. Do not boil. Pour over chicken. Serves 6
