Smoked Chicken Noodle Soup

Smoking Wood Chips, Fruit or Mesquite
1 lb chicken breasts, boneless and skinless
One yellow onion, diced finely
One Carrot, diced finely
1 can chicken stock (32 oz)
1 1/2 cups fine egg noodles, uncooked
3 T chopped fresh tarragon,
Lemon Pepper seasoning to taste
Salt and pepper to taste


Soak wood chips in water for 15 minutes. Drain and place in a foil lined deep metal baking pan. (You want an old pan with a rack in it even if it is a cookie rack.) Spray rack and place on top of chips. Add 1/2 cup water. Make sure wood doesn't touch chicken when it is placed. (It takes only a few chips.. not many at all Just a handful.) Cover pan tightly with foil and place over medium heat on a stove burner. The steam will cook the chicken and when the water is almost gone it will start to smoke. Turn heat down a little and cook chicken. It takes about a total of 20 minutes. The chicken will have a different texture and taste so very good.

In a saucepan, sweat onions and carrots. Deglaze with chicken stock and bring to boil and stir in noodles. When noodles are cooked, season with fresh tarragon, lemon pepper and salt and pepper. Slice smoked chicken and serve on top of soup. (Or you can dice it and add it to the soup. It is a different taste to eat it separately though.)

You can also add some tomatoes and rosemary to this soup also.
