Yorkshire Chicken

1 1/4 cups flour, divided
3 tsp. salt, divided
1 tsp. ground sage
1/4 tsp. ground red pepper
2 1/4- 3 lbs. chicken pieces, for frying
1/4 cup oil
1 tsp. baking powder
3 eggs, well beaten
1- 1 1/2 cups milk
1/4 cup melted butter or margarine
1/4 cup chopped fresh parsley


Preheat oven to 350 degrees F.

Combine 1/4 cup flour, 2 tsp. salt, the sage and pepper in a bag. Add chicken and shake to coat pieces. Brown chicken in oil on all sides in large skillet. Remove to a deep 2 qt. casserole.

Sift the remaining 1 cup flour, baking powder, and remaining tsp. of salt. Combine the eggs, milk, melted butter and parsley. Blend with the flour mixture until smooth. Pour over chicken. Bake at 350º for 1 hour or until done.

Serves 4
