Grilled Cornish Game Hens

Cornish Game Hens
Chicken Sauce

Wash defrosted game hens thoroughly. Butterfly hens, removing the backbone. Press flat, and place in gallon-size Ziploc bags, covering hens with chicken sauce. Marinate for up to two days in refrigerator, turning bag occasionally. When ready to cook, place hens on grill over low heat (or even indirect heat) until done. Baste hens with more sauce frequently. Since there is no sugar in the sauce, you won't get a lot of blackening.

Chicken Sauce

1 1/2 qt apple cider vinegar
3/4 c salt
1/8 c black pepper
1/8 c white pepper
1/8 c paprika
1/4 c crushed red pepper
1 c vegetable oil
1/2 c lemon juice
1/4 c Worcestershire sauce


Combine all ingredients in a half-gallon container or jug and shake well with the cap back on. Brush over chicken and barbecue. While chicken is cooking continue to brush sauce on, until chicken is cooked.

Notes: The easiest method is to spritz or shake the sauce on with any handy device you have. Use a liberal hand -- every time the chicken is turned. Also, the slower the chicken cooks, the better. If you make the original amount of sauce, it will keep for several weeks unrefrigerated. This sauce is good on anything, not just poultry.
