Chicken- Black Bean Casserole

Source: Spirit of Christmas Volume 2.

2/3 cup fresh lime juice
1/3 cup olive oil
1/2 teaspoon black pepper
2 teaspoons garlic powder,divided
2 teaspoons salt, divided
1 1/2 pound boneless, skinless chicken breast, cut into bite size pieces
4 cups cooked white rice
2 cans ( 15 oz each) black beans
1 cup finely chopped cilantro
1 teaspoon onion powder
1 taspoon chili powder
1 teaspoon ground cumin


In a medium bowl, whisk lime juice, oil, pepper, 1 teaspoon garlic powder and salt.

Add chicken; stir until evenly coated. Cover and refrigerate 2 hours.

Preheat oven to 350° F.

In a 2 quart casserole, combine rice, undrained beans, cilantro, onion powder, chili powder, cumin, remaining garlic powder and salt; set aside.

Using a slotted spoon, place chicken in a large skillet.

Cook over medium heat until juices run clear when chicken is pierced with fork.

Stir chicken into rice mixture, cover and bake 40 to 45 min or until heated through.

Toss into a pretty serving bowl and sprinkle with Parmesan cheese or shredded Monterey Jack.

Makes 9 -1 cup servings.
