Noodle Salad with Spicy Peanut Sauce

Spicy Peanut Sauce
1/4 cup minced onion
2/3 cup chicken broth -- divided
1/3 cup peanut butter
1 tablespoon soy sauce
1 teaspoon lime juice
1/2 teaspoon sesame oil
1/2 teaspoon ground coriander
1/4 teaspoon crushed red pepper flakes
hot pepper sauce

Noodle Salad
3/4 pound skinless boneless chicken breast
salt and pepper
1/2 pound uncooked thin pasta
1 tablespoon peanut oil
1 carrot -- julienned
2/3 cup snow peas -- julienned
1/2 red bell pepper -- julienned
2 tablespoons chopped peanuts


For sauce: Place onion and 1 tbl. broth in a 1 cup measure; cover with vented plastic wrap.

Microwave on high 2 min. Stir in remaining broth, peanut butter, soy, lime, sesame oil, coriander, pepper flakes and pepper sauce.

(Recipe may be made up to 2 days in advance and stored, covered, in refrigerator. Bring to room temp. to serve.)

For Salad: Season chicken with salt and pepper, place in a glass pie plate and cover with vented plastic wrap.

Microwave on med-high ( 70% ) 6 min or until juices run clear. Cool and slice diagonally into thin strips.

Cook pasta according to pkg. directions. Drain and toss with peanut oil. Set aside and keep warm.

Place carrots in a 2-cup glass measure; cover with vented plastic wrap and microwave on high 1 min. add snow peas, stir and re-cover; microwave on high 1 min.

Arrange pasta on individual plates, top with carrots and snow peas, bell pepper and chicken. Spoon sauce over top; sprinkle with peanuts.
