Smoked Turkey Quiche

1 (9 inch) pie crust -- unbaked
1 1/4 cups cooked smoked turkey breast -- diced
1/3 cup chopped onion
1 tablespoon butter or margarine
1 1/2 cups Swiss cheese -- shredded
3 eggs -- slightly beaten
1 cup half and half
1/2 teaspoon dry mustard
1/8 teaspoon salt
dash ground red pepper


Preheat oven to 450° F. Bake the unpricked pastry shell in a 450 F. oven for 4-5 minutes or until it just begins to puff. Remove from the oven. Reduce oven temperature to 375 F.

Meanwhile, in a medium skillet, cook turkey and onion in butter over medium-high heat till onion is tender, but not brown.

Sprinkle cheese over bottom of prebaked shell. Spoon turkey mixture over cheese.

In a medium bowl, whisk together the eggs, cream, mustard, salt and red pepper. Pour over the cheese-turkey mixture.

Bake in a 375 F. oven for about 30 minutes or until a knife inserted near center comes out clean. If necessary, cover edge of crust with foil to prevent overbrowning. Let quiche cool for 10 minutes before serving.
