Turkey Soup

1 turkey carcass broken up and placed in a large stock pot(with as much meat cut off as possible set aside in a bowl in the fridge)
water to barely cover
salt and pepper and any other spices like
a couple of chicken bouillon cubes
1/2 to 1 cup dry white wine or sherry
1 or 2 onions, chopped
chopped vegetables, such as carrots, celery, green peppers, potatoes, etc


Bring to a boil then turn to simmer for several hours.

Remove bones and let cool. Then remove more meat and add to the bowl in fridge. Now you can either let the stock cool in fridge overnight or if it's cold outside I'll set it out to cool. Then I remove as much of the fat that has risen to the top as I can.

Then either late that afternoon or the next day add chopped vegetables. Bring to a boil and simmer until vegetables are done. Add any left over rice, plus left over gravy, and the bowl of shredded or cubed turkey. Heat that thru and serve.
