Turkey Soup: Witches Brew

Witches Brew

1 TBS salad or olive oil
2 pounds ground turkey
1 onion, chopped
1 red bell pepper, seeded and chopped
2 cloves garlic, minced
1 TBS chili powder
2 tsp cumin
1 tsp dried oregano
2 quarts chicken broth
3 cans hominy, garbanzo beans or a mixture of the two, drained
1 small bag of frozen peas
Salt and pepper


Pour oil into large pan and brown ground turkey. Add onion, bell pepper, and garlic. Cook 5 min. or until onion is limp. Stir in chili powder, cumin, oregano, and broth. Cover and bring to a boil. Lower heat and simmer for 15 min. Add hominy and frozen peas. Bring soup back up to a boil and boil 3 min. Add salt and pepper to taste.

This soup was called "WITCHES STEW" for the following reason. Using a large pumpkin (about 16 inches tall and 16 inches wide)--cut top off of pumpkin, scoop out seeds and strings. Pour boiling water into pumpkin and let stand 10 min. Pour out boiling water and ladle soup into its pumkin bowl. You can carefully replace the pumpkin lid to keep stew hot.
