Turkey Stroganoff Roll with Noodles

2 turkey thighs, boned
2 Tbsps. prepared mustard
4 teasp. Worcestershire sauce
4 to 5 cloves garlic, crushed
pepper to taste
1/2 cup fresh parsley, minced
3 cups canned tomatoes, chopped, with liquid
1 large onion, peeled and chopped
1 1/2 cups dry white wine
4 to 6 ounces dry noodles
Arrowroot to thicken

Spread boned turkey thighs flat, skin side down. Spread the inside lightly with mustard and sprinkle with Worcestershire sauce, pepper, half the parsley and half the garlic. Roll up with the seasonings inside. Secure by tying with kitchen twine.

Brown the roll in a skillet (spray with cooking spray) Turn and brown, then discard any fat.

Add tomatoes, onion, wine and the rest of the garlic (chopped). Cover and simmer 1 1/2 hours. 15 to 20 minues before the turkey rolls are cooked, boil water and stir in noodles.

When noodles are cooked, add to turkey rolls, along with the rest of the minced parsley. If desired, thicken sauce with arrowroot.
