Bread and Butter Pickles
2 lb. Kirby cucumbers (small and unwaxed)
4 cups water
2 Tbl. kosher salt
2 cups cider vinegar
2 cups sugar
1 Tbl. mustard seeds (crushed)
1/2 tsp. each: salt; celery seed
1/4 tsp. ground cloves
Wash kirbies and slice thickly or thinly as preferred. Cover with water and stir in salt; chill covered overnight; drain and rinse.
Combine remaining ingredients and bring just to a boil. Pour over cucumbers and chill several days. Will keep several months refrigerated, but only if no one knows they're there.
