Spiced Fruit-Pecan Conserve
Start to finish: 10 minutes

1 Tbsp. margarine or butter
1/2 cup chopped pecans
3 medium Golden Delicious,
Granny Smith, Braeburn, or other cooking apples, peeled, cored, and finely chopped (about 2 1/2 cups)
1/4 tsp. ground cinnamon
1/4 tsp. ground cardamom
1/8 tsp. ground cloves
1/2 cup apple juice
1 Tbsp. honey


In a skillet melt margarine or butter over medium heat. Cook pecans for 2 minutes or until toasted; remove and set aside. Add apples and spices to skillet. Cook and stir for 1 minute. Add apple juice; bring just to boiling. Cover and cook for 5 minutes or until apples are just tender.

Uncover fruit mixture. Simmer for 3 minutes or until liquid is almost gone. Stir in honey and pecans. Refrigerate, covered, for up to 3 weeks. Makes 1 1/2 cups.
