Marinade for Jerky or Fish

4 lbs. Meat
1 tablespoon liquid smoke
1 teaspoon salt
2 level tablespoons Lawry's Tenderizing Beef Marinade Mix
2/3 cup water

Remove all fat from meat. Cut meat with grain into long, narrow strips about 1/4" thick.

Mix remaining ingredients and let mixture stand for 20 minutes. Add meat and marinate in mixture for 1/2 hour, turning frequently. Drain meat and dry in food dehydrator for about 6 hours. Cool when meat is dry enough to bend, but not break.

Store in clean jar with tight lid. Refrigerate if storing any length of time.

Notes: Four pounds of meat will dry to one pound. Lean, raw beef and venison make best jerkies.

Cooked meat as well as raw, may be dehydrated for later reconstitution to use in many recipes such as stews and casseroles.
