Freezer Special Salsa

5 lbs. tomatoes, peeled and chopped
1 bell pepper, seeded and diced
1 can (4 oz.) diced jalapenos
1/2 cup onion, diced
1 cup dark brown sugar
1 cup cider vinegar
1 tbsp. cinnamon
1 tsp. cumin

Simmer tomatoes, bell pepper, jalapenos and onion for one hour. Add the remaining ingredients and simmer 30 minutes more. Cool slightly and puree in blender. Freeze in containers. When ready to serve, thaw and heat in microwave. Makes 5 cups
