Spiced Peaches or Pears

3 1/2 lb. firm pears or peaches, peeled halved and cored (for pears)
Vinegar-water (2 qts. water plus 2 T. white vinegar
4 (3 inch) cinnamon sticks, broken
1 whole nutmeg, chopped
2 T. anise seed (optional)
3 c. granulated sugar
1 1/2 c. white vinegar
1 c. water


Places fruit in vinegar-water to prevent browning. Tie cinnamon, nutmeg and anise seed in a spice bag or cheesecloth.

In a 6 to 8 quart saucepot, combine sugar, vinegar, water and spice bag. Bring to a boil. Reduce heat and simmer for 5 minutes. Drain pears and add to syrup. Simmer for 5 to 10 min. or until fruit is tender but still firm. Remove spice bag. Immediately fill hot pint jars with fruit, leaving 1/2" headspace.

Process in boiling water bath for 15 min. Serve as an accompaniment to pork, chicken, turkey or fish. Makes 4 pts.
