Jalapeno Jelly 
from the Net 1 cup red or green bell pepper strips 2 cups cider vinegar 1/3 cup fresh or canned jalapenos 1 to 1 1/2 cups finely slivered dried apricots 6 cups sugar 1 (3 oz.) pkg pectin food coloring, if desired Combine red or green bell pepper strips, cider vinegar, and jalapenos (drain and rinse, no stems or seeds) in an electric blender. Pulse until largely ground. Add dried apricots and sugar in sauce pan and bring to boil. Boil 5 min, remove from heat, skim off foam; cool 2 min. Mix in pectin and food coloring if desired. Pour into sterilized jelly jar and fasten lid. Place in boiling water bath for 15 min., cool. Great over cream cheese with chips or crackers!
