Green Tomato and Lime Jam
1 kg./ 2 lb. 4oz. small green tomatoes
725 g. /1 lb. 12 oz. white sugar
1 fresh lime
Vanilla pod
Wash, wipe and slice the tomatoes thinly. Place in a bowl in layers with the sugar and leave for 24 hours.
Wipe the lime and slice it thinly, removing pips.
Place all ingredients in a stainless steel pan, and bring to the boil. Skim and continue to simmer very gently, stirring occasionally till the jam is golden and a set it obtained. This will take approximately 2 hours.
Remove vanilla pod and cool before potting. Seal when cold.
