Cinnamon Apple Jelly

3 pounds apples (10 to 11 apples)
5 cups water -- approximately
3 cups sugar
1 drop oil of cinnamon
2 drops red food coloring


Wash fruit; remove stem and blossom ends. Do not pare or core. Cut apples into small chunks. Place in large kettle or Dutch oven. Add enough of the water just to cover. Cover and bring to boiling over high heat. Reduce heat and simmer till apples are soft, 20-25 minutes.

Strain juice thru jelly bag. Measure 4 cups juice.

In large kettle , stir together juice and sugar until dissolved. Bring to full rolling boil over high heat. Boil hard until syrup "sheets" off a metal spoon, 10-12 minutes. Remove from heat; skim off foam. Add oil of cinnamon and food coloring. Pour into hot clean jelly glasses, leaving 1/2-inch headspace. Seal at once.

Makes about four 6-ounce glasses
