Pepper Jelly

Pepper Jelly

2 green pepper
1/3 cup canned jalapeno peppers
1 1/2 cups cider vinegar
6 cups sugar
6 ounces liquid pectin
3 drops green food coloring


Seed and chop 2 meduim green peppers. Place in a food processor with jalapeno peppers. Puree.

Pour into a kettle and add sugar and vinegar. Bring to a full rolling boil. Remove pan from heat and let stand 5 minutes. Skim off foam. Add pectin and food coloring.

Ladle into hot sterlized jars leaving 1/2" head space. Water bath 10 minutes.
