Marinated Button Mushrooms

6 cups small button mushrooms -- (2 lbs.) 
1/4 cup lemon juice 
1 teaspoon salt 
1 cup tarragon vinegar 
1 teaspoon dried oregano leaves 
1 teaspoon dried basil leaves 
1/2 teaspoon salt 
2 cloves garlic -- peeled and halved 
12 black peppercorns 
3/4 cup olive oil or 1/4 cup olive and 1/2 
cup veg oil 

Wash four 1/2-pt jars in hot soapy water; rinse. 

Keep hot until needed. 

Wash mushrooms briefly in cold water, agitating water; lift from water. 

Trim stems flat to mushroom cap. 

Place trimmed mushrooms in a 4-qt pot. 

Sprinkle with lemon juice. 

Add water to cover; add salt. 

Bring to a boil over medium-high heat.
Reduce heat to low; simmer, uncovered, 5 min.; drain.  

In a small saucepan, bring vinegar to a boil; add mushrooms. 

Cover; keep hot. 

In each hot jar, place 1/4 tsp oregano, 1/4 tsp basil, 1/8 tsp salt, 1/2 
clove garlic, 3 peppercorns, and 3 tbl oil. 

Pack mushrooms into 1 jar at a time, leaving 1/2" headspace.

Add hot vinegar to cover. 

Release trapped air, wipe rim with damp cloth, and attach lid. 

Place in canner.

Fill and close remaining jars. 

Process in boiling water bath for 20 min. 

Makes four 1/2-pts
