Microwave Cranberry-Jalapeno Jelly

6 jalapeno peppers 
2 1/2 cups cranberry juice cocktail 
7 cups sugar 
6 oz. liquid fruit pectin 
1 cup vinegar 
red food coloring (optional) 


Wearing lightweight rubber gloves, quarter and remove seeds from peppers.

Place peppers and cranberry juice in blender. 

Process until peppers are very finely chopped.
 
Combine with sugar in 4 quart pot. 

Cover with plastic wrap (so you can see mixture as it cooks).

Microwave on High 18 to 20 minutes or until mixture comes to a full rolling
boil. 

Add pectin and microwave on High 2 to 3 minutes or until it returns to a 
boil. 

Add vinegar and food coloring. 

Pour mixture into sterilized jelly jars and seal.
 
Makes 8 (8 ounce) jars. 

Serving suggestion: spread 1/2 cup jelly over an 8 ounce block of cream 
cheese. Serve with assorted crackers.
