Pickled Pig's Feet
5 pigs feet
two qt. jars
1 and 1/2 cups water
2-cups vinegar
2- tablespoon salt
2 little red hot peppers
In a large stainless steel pot cover pigs feet with water. Boil pigs feet 1-1/2 hours or until tender; drain.
Rinse pigs feet in hot water to remove excess oil from feet.
Put 2 hot peppers in each jar. Put pigs feet in qt. jars Mix salt vinegar and water together; pour vinegar water mixture over pigs feet to cover.
Refrigerate for at least 3 days to 1 week before eating.
Makes 2 qts.
