Easy Lime Pickles

Pickles:
7 lb cucumbers, sliced ¼" thick
2 cups lime (See note 1 below)
2 gallons water

Syrup:
4 1/2 lbs white sugar
2 quarts vinegar
1/2 quart water
1 tsp celery seed
1 large tbs salt
1 tsp mixed pickling spices


Mix pickle ingredients together. Soak for 24 hours in plastic dish pan. (See note 2 below) Rinse well and cover with clear, cold water. Let set 3 more hours.

Drain pickles and cover with the syrup ingredients. Put this in a kettle and mix over heat until sugar is dissolved. Let stand until next morning in this solution.

Next day, bring all to a boil and boil for 35 minutes. Pack in pint jars and seal.

Notes:
1) This is the king of lime that is bought at hardware stores and is used on lawns and gardens.
2) If left over 24 hours, they will spoil for you.
