Fresh Cucumber Pickles

9 cups sliced, unpeeled cucumbers
4 large onions, sliced
1 large green pepper, sliced
1 large red pepper, sliced

Dressing:
2 Tbsp. salt
3 cups sugar
1 tsp. celery seed
3 cups vinegar
1 tsp. mustard seed
1 tsp. turmeric


Wash cucumbers and slice in 1/2-inch slices. Peel onions and slice, then separate into rings. Wash and core green and red peppers; slice into rings. Place in a large bowl and sprinkle with 2 tablespoons salt. Let sit while you fix the dressing.

In a large saucepan, put sugar, vinegar, celery seed, mustard seed and turmeric. Bring to a boil and boil until sugar dissolves (it is very yellow and stains everything).

Put the vegetables in a one gallon jar. Drain the juice. Pour the sugar-vinegar dressing over the vegetables to cover. Seal tightly with the lid and place jar in the back of the refrigerator for 3 weeks to marinate.
