Frozen Cucumber Pickles
2 cups sugar
2 cups white vinegar (5 %)
1/8 to 1/4 cup sea salt
9 or 10 long cucumbers, sliced
1 onion, chopped
1 green pepper, seeded and chopped
Heat sugar and vinegar until sugar is dissolved, then boil for 1 to 2 minutes; cool
Combine vegetables in a large bowl and pour sugar-vinegar mixture over.
Cover and let set a room temperature overnight, stirring frequently.
Pack in jars with liquid and freeze or store in refrigerator.
