Lime Pickles

7 cups sliced cucumber
2 gallons water
2 cups dry lime


Mix the lime, water and cucumbers in container. Can use a plastic bucket with good results. Let stand 24 hours. Then, wash at least 5 times in cold water, and cover with fresh water. Let stand for 3 hours and drain. Add 1/2 gallon vinegar minus one cup, 4 cups sugar and 1 tablespoon salt. Mix well. Add
cucumbers and let stand for another 24 hours. Heat for 35 minutes, place in jars and seal.

NOTES : Lime pickles are delicious, firm and crisp. You may add a few drops of green coloring if you desire a brighter color. Use a wide mouth jar if possible as these pickles are very firm and do not bend easily.
