Beet Relish
2 Cups Chopped cooked (and skinned) beets
2 Cups Shredded green cabbage
1/2 Cup prepared horseradish
1 Cup minced celery
1/4 tsp. pepper
3/4 Cup sugar
1/2 tsp. salt
1 Cup vinegar
pinch cayenne.
Combine all. Heat through to boiling point. Pour into sterilized jars and seal with hot lids and rings.
