Rosemary Jelly

  Rosemary Jelly 

  4-6 sprigs (about 2-3") fresh rosemary, snipped 
  1 1/4 cups boiling water 
  1/4 cup vinegar 
  3 cups sugar 
  a few drops of green food coloring (optional) 
  1/2 bottle liquid fruit pectin (powdered won't work) 



Pour boiling water over rosemary. 

Cover and let steep 15 minutes. 

Strain. 

Measure 1 cup of the infusion and put into saucepan. 

Stir in vinegar & sugar.

Bring to a rolling boil over high heat. 

Add food coloring (if using) and pectin, stirring  constantly.  

Bring to boil again and boil 1/2 minute. 

Remove from  heat, skim and pour into hot, sterilized jelly glasses 
(sterilize jelly glasses by pouring boiling water into them before starting jelly).
 
I use 1/2 pint jelly glasses for this and it makes  about 5 or 6 glasses.
