Tomato Puree

2 pecks tomatoes -- washed and chopped
3 1/2 cups chopped sweet peppers
5 cups chopped onions
4 cups chopped celery
4 cups chopped carrots
1 small parsley -- chopped
2 tablespoons salt -- optional


Cook all of the vegetables in a very large pot over low heat. (Do not use aluminum.) Cook until all vegetables are very soft. Put the whole mixture through a strainer, food mill or a tomato grinder. Cook mixture until thick, about 1 hour, stirring occasionally.

Ladle into hot sterilized pint or quart jars, leaving 1-inch head space. Wipe tops and threads of jars and seal. Give jars a hot water bath for 10 minutes.
