Vegetable: Mom's Chow-Chow

Mom's Chow-Chow

5lbs of green tomatoes sliced stem ends and cores removed
1 1/2 lbs of cut up onions (sliced across like you're preparing rings, use small onions)
1 1/3 cups of coarse salt
3 1/3 cups of sugar
4 1/2 tsp Mixed pickling spice tied in double layered cheesecloth
2 tsp turmeric
2 cups white vinegar*


Layer tomatoes with onions and salt in a large saucepan. Cover and let stand overnight.

Add remaining ingredients. (Vinegar should just be a bit visible too much makes too much juice.) Simmer uncovered for 2 hours, stirring occasionally. More turmeric can be added for color and more sugar can be added for taste. You won't get an accurate taste test if you sample it when warm put some on a spoon and let it cool.

Put in sterilized pint jars to within 1/2 inch of the top. After sealing, put the bottles in a process of boiling water bath for 5 minutes.

You should get about 4 pints.

*( Judy uses 1 & 1/2 cups white vinegar and 1/2 cup apple cider vinegar)So if you use the wine it should be 1 and 1/4 cups white vinegar and 1/4 cup white wine or half and half cider vinegar and white wine
