Zucchini Relish

5 Zucchini (2 1/2 LBS.)
2 Onions
1 red pepper
1 green pepper
1/4 cup sea salt
1/2 cup sugar
1/2 tsp. dry mustard
1 tsp. celery seed
1/4 tsp cinnamon
1/4 tsp. nutmeg
1 cup cider vinegar
1/4 tsp. pepper

Grind the zucchini, onion, and peppers with the chopping blade or use the food processor. Mix with salt and cover with water overnight in the refrigerator.

Next morning, rinse the vegetables and was wash and rinse again.

In large pan, add the vegetables and all the other things and bring to a boil, stirring constantly. Reduce heat and simmer, uncovered, for 20 minutes. Refrigerate or process according to standard canning methods.
