Herbed Vinegar Recipes and Variations

12 (2-inch) fresh rosemary sprigs
10 peeled garlic cloves
3/4 cup golden raisins
1 quart champagne vinegar or white wine vinegar


Put all ingredients into a suitable glass jar. Seal tightly with a plastic lid (if using a metal lid, place a double thickness of plastic wrap between lid and jar). Place jar on counter top for 2 weeks to infuse.

After 2 weeks, remove garlic cloves. Replace lid and leave for another 2 weeks.

At end of second 2 weeks, strain vinegar, discarding rosemary and raisins. Fill glass bottles with strained vinegar.

Optional: Add a sprig of fresh rosemary to jar.

Variations: substitute total equal amounts of following herbs for rosemary in above recipe:
rosemary and tarragon
nasturtium blossoms for a peppery taste
combinations of following: lemon basil, lemon thyme, lemon verbena, lemon balm, and lemon peel red basil, such as Purple Ruffles or Dark Opal infused into white wine vinegar produces most gorgeous ruby color.
