Boston Baked Beans

2 cups dried beans
1/4 cup vegetable oil
1/3 pound salt pork, diced
3 tablespoons brown sugar
3 tablespoons molasses
1/2 teaspoon mustard
1 onion, diced
2 tablespoons catsup
water


Soak beans overnight in vegetable oil, salt and cold water to well cover beans; drain.

Turn heat selector to medium and sear pork; remove excess drippings. Add beans, brown sugar, molasses, mustard, onion, catsup and enough water to well cover beans. Close cover securely. Cook 45 minutes at 15 pounds of pressure. Let pressure drop of its own accord. Add salt according to taste.
