Japanese Style Fried Rice

4 slices of bacon chopped
2 chicken breast halves chopped or can substitute left over ham or pork
1 small onion diced
2 ribs celery diced
1 can mushroom slices or can substitute 4oz fresh
3 eggs scrambled
3 to 4 cups calrose rice (cooked ahead of time and cooled)
1/4 to 1/3 cup soy sauce (depends on amount of rice used)
fresh chives or green onions for garnish


Pre-cook rice earlier in the day in rice cooker or according to package directions.

In separate pan scramble eggs to your liking, set aside until cooled slightly and chop into bite size pieces.

In wok or large frying pan, add bacon pieces and fry until cooked. Leave 1 to 2 Tbsp drippings in pan and saute chicken, onions, and celery until chicken is cooked through. Add Mushrooms and saute 1 to 2 minutes. Add rice and soy sauce and stir thoroughly until rice is heated. Add eggs and stir lightly 1 minute more. Top with fresh chives.

Serves 6
