Black Beans and Rice

1 pound dried black beans, washed and drained
6 cups water
2 bay leaves
1/2 teaspoon salt (optional)
1/4 teaspoon pepper
4 ounces turkey ham, chopped
2 tablespoons olive oil
1 cup onion, chopped
1 green bell pepper, chopped
1 clove garlic, crushed


In a large saucepan place beans and enough water to cover. Bring to a boil over medium-high heat. Boil for 2 minutes; remove from heat; cover and let stand for 1 hour; drain.

To the beans add 6 cups water, bay leaves, salt and pepper; stir in ham. Bring to a boil over medium heat. Reduce heat; cover and simmer for 2 hours, adding additional water if needed. Remove bay leaves.

In a small skillet, heat olive oil over low heat. Add onion, green pepper and garlic. Saute for several minutes. Then add to the beans. Serve over rice.
