Cajun Fried Rice

Cajun Fried Rice 

2 qt. Rice, cooked, cold 
1 cup Salad oil 
1 lb. Cabbage, chunked 
1/2 cup Shredded carrot 
1 cup Diced onion 
1/2 cup Diced celery 
1/2 cup Diced bell pepper 
1 Red bell pepper, diced 
1/2 cup Chopped scallions (tops) 
1/2 cup Chopped scallions (white part) 
1 Tbl. Minced garlic 
10 oz. Ham, cubed 
10 oz. Chicken, cubed 
8 oz. Cajun sausage, cubed 
1/2 cup Soy sauce 
1 cup Peas 
1 Tbl. Cajun seasoning 
1 tsp. Black pepper 
2 tsp. Salt 


In a large pot of hot oil, lightly cook all the meats and vegetables 
(except peas) over high heat, stirring often. 

Add seasoning and peas. 

Simmer 4-5 minutes. 

Saute cold rice with a little salad oil.

Add fried rice garnish. 

Fry and stir well.
