posted by Sue Freeman 05-28-98 4:51 PM Chicken Fried Rice 2 t. veggie oil, divided 2 eggs beaten 3 chopped green onions 1\2 lb. skinned chicken breasts, thinly sliced 1 Tbl. minced gingeroot 1\4 tsp. crushed red pepper 3 cups cooked white rice 1 bunch broccoli flowerets 1\2 lb. carrots sliced 1\2 cup chicken broth 3 Tbl. soy sauce With 1 tsp. oil, cook eggs and cut into thin strips, or scramble very fine. Saute onions, chicken, ginger, red pepper in remaining oil for 4 minutes. Add rice cook 1 minute; add remaining ingredients, reduce heat and cover and cook 5-8 minutes until veggies are tender. Mix egg into mixture. (445 c. per serving)
