Mexican Rice

2 c. long grain rice
1 small onion, chopped
3 slices garlic
1 large tomato
2 c. chicken broth
1 can smoked oysters
1 can clams
2 roasted peppers


Fry rice in heated cooking oil in large frying pan until slightly brown. Add onion, garlic and tomato; stir over a medium flame, about 5 minutes. Add 4 cups water and 2 cups chicken broth; bring to a boil. Add smoked oysters, clams and roasted peppers. Bring to low flame; stir-cook for about 20 minutes or until water is dissolved.
