Rice Pudding

Creamy Rice Pudding

3 cups milk
3 cups light cream
1 1/2 cups regular rice
1/2 cup sugar
2 tsp. vanilla
1/2 tsp nutmeg
1 cup heavy cream


In a saucepan add milk, light cream, rice, and sugar. Heat until it bubbles around the edge, stirring frequently. Reduce heat to low and cover and simmer for 1 hour until rice is very tender, stirring occasionally.

Stir in vanilla and nutmeg and chill for about 3 hours.

Then beat heavy cream until it is whipped and fold it into the rice mixture and serve.
