Fruited Rice Pilaf Microwave

1/4 cup butter
3 shallots, finely chopped
1/4 cup finely chopped celery
1/4 cup finely chopped carrots
1 small peach, finely chopped
1/4 cup dried cranberries, chopped
1 1/2 cups rice
2 tablespoons chopped fresh parsley
salt and pepper to taste
1 small bay leaf
1 teaspoon fresh thyme
2 2/3 cups chicken stock


Combine butter, onion, celery, carrots, and peach in a 2 quart casserole. Microwave for 3-4 minutes on high or until the onion is transparent. Add cranberries, rice, parsley, salt, pepper, bay leaf, thyme, and stock. Cover and microwave on high for 5-6 minutes or until the mixture begins to boil. Microwave for 16-18 minutes at 50 percent or until rice is tender. Let stand for 5 minutes covered. Remove the bay leaf before serving.
