Spicy Peanut & Scallion Pilaf

1 small clove garlic -minced
1/8 tsp. crushed red pepper flakes
2 tsp. olive oil
1/2 cup converted rice -or any white rice
1/4 tsp salt
1/4 cup salted roasted peanuts -chopped
1/4 cup scallions -thinly sliced
1 tsp. fresh lime juice


In a small heavy saucepan, cook garlic and red pepper flakes in oil over moderately low heat for 1 minute, add the rice, and cook mixture over moderate heat, stirring, for 1 minute.

Stir in 1 cup water and salt, bring liquid to a boil, and cook rice, covered, over low heat for 18-20 minutes, or until liquid is absorbed.

Fluff rice with a fork, let it stand, covered, off heat for 5 minutes, and stir in peanuts, scallions and lime juice.

Serves 2
