Artichoke Rice Salad
5 cups chicken broth (bouillon is good)
2 cups raw long-grain rice
3 to 4 celery stalks, chopped
1 (8 oz.) jar green olives, sliced
1 green pepper, chopped
2 bunches green onions, chopped
3 jars marinated artichoke hearts, chopped (reserve liquid)
1/2 tsp. curry powder
2 cups mayonnaise
Simmer chicken broth and rice for 20 minutes.
Add celery, olives, green peppers, onions and artichoke hearts.
Make sauce of artichoke liquid, 1/2 teaspoon curry powder and 2 cups mayonnaise. Combine everything together and chill.
This is better if you make it in advance. This recipe makes a very large amount.
