Chefshell's Far East Westernized Rice Salad

3 cups cooked rice
1/2 cup blanched, tender broccoli florets, or broccolini
1 bunch scallions (white and green parts) cut 1/2 inch pieces
1/2 cup snow peas, blanched, tender cut into strips
2 carrots, blanched, tender,thin rounds or julienned
1 red Asian cili pepper or jalapeno, diced fine (optional)
1/2 cup cilantro, chopped
1/2 cup asparagus, blanched, tender,cut into 1/2 inch pieces
1 red, orange, or yellow bell pepper, cut into strips
1 clove minced, fresh garlic

Dressing:
1/3 cup lime juice, fresh squeezed
1/4 cup mandarin or regular orange juice (fresh)
1/3 cup vegetable or peanut oil
1 tsp. hot chili oil
1 tsp. toasted sesame oil
1 tbsp. rice vinegar
3 tbsp. soy sauce
1 tsp. minced ginger (fresh)
1 tsp. hoisin sauce or honey
salt, pepper, and red pepper flakes to taste
Chopped cashews or peanuts for garnish


Make the dressing, toss all the blanched veggies and raw ones with the rice, and mix the dressing in thoroughly. Do this while the rice was warm, but not hot to make it soak in
