Consomme' Rice

2 cups uncooked regular rice
1/4 cup plus 2 tblsp. butter or margarine, melted
2 (10 1/2 oz.) cans beef consomme', undiluted
1 1/4 cups water
Parsley sprigs


Combine first 4 ingredients in a 3-quart casserole. Bake, uncovered, at 350 deg. for 1 hour. Garnish with parsley before serving.

Yield: 8 to 10 servings
