Rice Pilaf

Rice Pilaf (microwave) 6 servings

1/4 cup butter
1 cup long grain rice
2 1/4 cups chicken broth
1/4 cup golden raisins
1 to 1 1/2 tsp. curry powder


In a 2-quart casserole dish, heat butter at high 1 minute or until melted; stir in rice. Heat at high 2-3 minutes or until rice is browned; stir once. Add remaining ingredients and heat, covered with glass lid, at high 4-5 minutes, and at Medium Low for 12-14 minutes, or until rice is tender.

To complete: Let stand, covered, for 5 minutes. This can be made ahead and it reheats beautifully.
