Savoury Rice
1 1/4 cups basmati rice
8 cups boiling water
4 teaspoons Vegeta -- (chicken stock powder)
1 Tablespoon lemon juice
1 cup frozen peas
1 red onion, finely chopped
1 level teaspoon celery seeds
1 1/2 cups left-over pork roast -- finely chopped
2 cups chopped Cos lettuce -- or spinach
2 small tins champignons -- chopped in quarters, juice retained
1 teaspoon turmeric -- dissolved in a little hot water
freshly ground black pepper.
Salt to taste
1 Tablespoon butter
Place basmati rice, Vegeta chicken stock powder, lemon juice, onion and celery seeds in the boiling water. Boil on low heat, until the rice is almost cooked. Add the rest of the ingredients, including the juice from champignons. Continue cooking until rice and peas are fully cooked. Drain well. Add the butter and mix through thoroughly with a fork.
