Nutty Mushroom Rice
4 servings converted rice, prepared
1/3 cup chopped onion
1/3 cup shredded carrots
1/2 cup chopped walnuts (almond slivers work well, too)
1/4 teaspoon EACH marjoram, thyme and chopped rosemary
1 (4-oz.) can mushroom slices, drained
1 tablespoon butter
2 tablespoons chopped parsley
Prepare 4 servings of converted rice according to package directions. Set aside.
In a skillet, over medium-high heat, melt the butter. Add the onion, carrots, walnuts, mushrooms and herbs. Sauté until the vegetables are tender. Stir in the prepared rice and sprinkle with the parsley. Heat through and serve.
