posted by Connie 07-03-98 4:32 PM Vegetable Medley 3 cloves garlic, minced 1/4 cup olive oil 1 medium green pepper 1 large onion 1/2 medium eggplant 1 cup MJB long grain white rice 2 medium tomatoes 3 small zucchini Salt/pepper 1 cup chicken broth Cut vegetables into 1/4 inch slices. In large skillet, lightly brown garlic in hot oil. Layer pepper, onion, eggplant in skillet. Cover evenly with rice. Layer tomatoes and zucchini; sprinkle with salt and pepper. Pour on chicken broth. Bring to boiling, reduce heat, cover and simmer 30 to 40 minutes or until Rice is tender. Makes 6 to 8 servings.
