Yellow Rice with Black Beans

Yellow Rice with Black Beans 

  1 cup long-cooking rice 
  2 cups chicken broth (or water) 
  1 (16 oz.) can black beans 
  1/4 tsp. turmeric 
  1 tsp. salt 
  2 Tbl. olive oil 


Heat oil in pan. 

Add rice, stir till all is coated with oil and saute till rice loses it's
transparency. 

Add chicken broth, turmeric and salt and bring to a boil. 

Cover and cook 20 minutes or till rice is done.

When rice is done, empty can of black beans into pan, stir and cover. 

Let sit an additional 10 minutes. 

Heat from rice will warm up the beans.
